Matcha Mochi Bars
I’ve been craving homemade mochi so I decided to make some myself! This 3-step recipe is SO incredibly easy and very delicious (if you enjoy matcha).
INGREDIENTS YOU’LL NEED:
1 1/2 cups sweet rice flour
1 cup sugar
1/2 teaspoon baking powder
1 1/2 teaspoons matcha powder
1 cup water
3/4 cup coconut milk
3/4 teaspoon vanilla extract
Cornstarch (for dusting)
STEP 1:
Preheat the oven to 275°. Grease an 8-inch square glass pan. In a medium bowl, whisk together rice flour, sugar, baking powder and matcha powder. Using a seperate bowl, whisk together the water, coconut milk and vanilla extract. Pour wet ingredients into the dry ingredients and whisk until smooth. Pour batter into the pan and cover tightly with foil and bake for 60-80 minutes until the top is set. Remove foil, let cool, and let sit in room temperature overnight.
STEP 2:
Turn mochi onto a cutting board and cut square-ish cubes (or to your preference).
STEP 3:
Coat with cornstarch and ENJOY! ٩(^‿^)۶
