Blueberry Streusel Muffins

Since I’ve had a lot of extra time, I decided to make some yummy blueberry streusel muffins!

For this recipe, you’ll need:

  • Parchment paper (or muffin cups)

  • 1 1/2 cups all-purpose flour

  • 3/4 cup white sugar

  • 1/2 teaspoon salt

  • 2 teaspoons baking powder

  • 1/3 cup vegetable oil

  • 1 egg

  • 1/3 cup milk

  • 1 cup fresh blueberries [fresh is always better!]

For crumb topping:

  • 1/2 cup white sugar

  • 1/3 cup flour

  • 1/4 cup butter

  • 1 1/2 teaspoons ground cinnamon

I like to compile and organize all my ingredients before starting just so it makes it easier - so once you’ve done that, preheat the oven to 400° F.

Prepare your muffin pan and insert the liners. For this, I wanted to try something a bit fancier, so I used parchment paper. Take the paper, and cut about 10 (5x5) squares. Spray them with avocado oil or any similar baking spray and place them in the muffin pan. However, regular muffin cups work fine!

Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1 cup mark. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top and sprinkle with crumb topping [recipe in step 4].

Crumb Topping

Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup melted butter and 1 1/2 teaspoons cinnamon. Mix with fork and sprinkle over muffins before baking.

5.

Bake for 20-25 minutes.
